Housewifery Continues

I can't tell if my being home all the time is awesome or torture for Travis.  The torture being whatever project needing his assistance.  A piece of awesome was tonight.  I have been trying new recipes - our normal rotation of meals we ate at home once or twice a week was used up the first week I was home - and some have been better than others.  Tonight...home run!

I used a recipe from my friend Heather (Anderson) Castillo that she made for me years ago.  The broccoli recipe was new and both turned out amazing! 

BBQ Seafood
1 lb peel and eat shrimp or scallops, we used 1/2 lb of each
1/3 cup fresh lemon juice
1/4 cup oil
1/4 cup worchestershire sauce
1 tbsp honey
1.5 tsp basil
1.5 tsp thyme
1/4 tsp black pepper
1/8 tsp garlic salt

Mix well and marinade seafood for 30-60 minutes.  Skewer and BBQ on the grill.

Cashew Broccoli
1 1/2 pounds fresh broccoli, cut into bite size pieces
1/3 cup butter
1 tablespoon brown sugar
3 tablespoons soy sauce
2 teaspoons white vinegar (I only had rice wine vinegar...it worked great)
1/4 teaspoon ground black pepper
2 cloves garlic, minced
1/3 cup chopped salted cashews

Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.
I also fixed rice pilaf.  Delicious!!  Highly recommend!
