Grateful Month - Day 18

Today I am grateful for the very valuable lesson I learned at Christmas time, 2000.  I burnt my had really bad while making suckers and almost had a repeat tonight while trying to blacken chicken.  The recipe said to blacken, not burn and catch on fire!  I was using a cast iron skillet where only one side had a protected handle.  The other side was just as hot and I can't believe I didn't grab it - that would have been bad.  And I'm glad we didn't burn down my sister's apartment.  Our cooking adventures are NEVER boring!  This one was no exception...and it was DELICIOUS!
